The turkey is the one part of Thanksgiving dinner with a deadline. It has to be bought, thawed for days and roasted for hours, and mistakes are not easy to fix on the day. The good news is that it comes down to four numbers: the size, the thaw time, the roasting time and 165°F. This guide gives each with its source, and the turkey size and thaw calculator does the arithmetic for your guest count and dinner time. The rest of the topic is on the Friendsgiving planning hub.

How Big a Turkey Do You Need?

A common planning figure is 1 pound of whole turkey per person, and 1.5 pounds per person if you want leftovers. Butterball gives 1.5 pounds a guest as its standard. A whole turkey is mostly bone, which is why the numbers look large.

Guests1 lb each1.5 lb each2 lb each
66 lb9 lb12 lb
88 lb12 lb16 lb
1010 lb15 lb20 lb
1212 lb18 lb24 lb
1616 lb24 lb32 lb

These are planning estimates. Fewer side dishes, hungrier guests or a wish for plenty of leftovers push the number up, and a big potluck table with many sides lets it come down. Round up to a whole pound and buy the nearest size.

For a large group, the biggest turkeys are hard to handle and may not fit your oven. Above about 24 pounds, two smaller birds are often easier. Each one is planned separately with the calculator, but check that both fit your oven or that you have access to two.

Thawing: Fridge First

If the turkey is frozen, thaw it before you cook it, because the safe ways take days. USDA gives two safe methods.

In the refrigerator. Allow about 24 hours for every 4 to 5 pounds, with the fridge at 40°F or below. Keep the turkey in its wrapper on a tray so juices do not drip onto other food. The calculator uses 4 pounds per day, the cautious end, then adds a spare day so the turkey is thawed a day before it goes in the oven. A thawed turkey can stay in the fridge for 1 to 2 days before cooking.

TurkeyDays at 4 lb per dayPlus a spare day
10 lb34
15 lb45
20 lb56
24 lb67

For example, a 15 pound turkey for dinner on Thursday, November 26: 15 ÷ 4 = 3.75, which rounds up to 4 days, plus 1 spare day makes 5 days. It goes into the fridge on Saturday, November 21.

In cold water. For a turkey that is still frozen late, allow about 30 minutes per pound. Keep it in a leak-proof bag, submerge it in cold tap water, change the water every 30 minutes and cook the turkey immediately when it is thawed. A 15 pound turkey takes about 7.5 hours, which means it is a same-day method that needs you at home.

Do not thaw a turkey on the counter. USDA also says an unstuffed turkey can be cooked from frozen, but that it takes at least 50 percent longer than a thawed one, so it is not something to plan around.

Roasting Times at 325°F

USDA says to set the oven no lower than 325°F. The chart below is the Butterball chart for an unstuffed turkey at 325°F. It is a planning guide, not a promise.

Turkey weightRoasting time
4.5 to 7 lb2 to 2.5 hours
7 to 9 lb2.5 to 3 hours
9 to 18 lb3 to 3.5 hours
18 to 22 lb3.5 to 4 hours
22 to 24 lb4 to 4.5 hours
24 to 30 lb4.5 to 5 hours

USDA’s chart runs longer (about 3¾–4¼ hours for 14–18 lb), so plan from the long end and start checking early. The Butterball chart above is one published chart, and USDA’s own unstuffed 325°F chart gives longer times. Plan from the long end, because a turkey that finishes early can rest longer under foil and one that finishes late holds up dinner. Allow a 30 minute rest before carving. For a 5:00 pm dinner and a 15 pound turkey: out of the oven at 4:30 pm, and in at 1:00 pm, which is 3.5 hours earlier. Preheat the oven before that, and allow time for the oven to recover when you open the door.

Do you plan to stuff it? The chart above is for an unstuffed bird. A stuffed turkey takes longer and the stuffing has to reach 165°F in the center too. The calculator adds 30 minutes to the long end for a stuffed bird as our own planning allowance, not a published figure. Baking the stuffing in a separate dish avoids the problem and frees up the schedule.

The Only Number That Matters: 165°F

Everything above is for planning. The thermometer decides. USDA says a turkey is safe at 165°F, measured at three places: the thickest part of the breast, the innermost part of the thigh and the innermost part of the wing. Do not touch bone, since it reads hot. The color of the juices and a pop-up timer are not reliable. If one spot is under temperature, put it back in and check again in 15 minutes.

Start checking about 15 minutes before the long end of the range. A turkey that is at temperature early comes out and rests under foil, and the rest is not wasted: the juices settle and it carves more cleanly.

Leftovers and the 2-Hour Rule

USDA guidance is that cooked food should not sit out for more than 2 hours, or 1 hour if it is above 90°F. Refrigerate leftovers within 2 hours of cooking, which is about an hour after you sit down. Leftover turkey and stuffing keep 3 to 4 days in the fridge, and gravy about 1 to 2 days, or freeze them. Cut the meat off the carcass before you store it, and put it in shallow containers so it cools quickly. Date the containers.

An Example Plan

Ten friends, 1.5 pounds each, dinner at 5:00 pm on Thursday, November 26, with the stuffing baked separately.

  1. Size: 10 × 1.5 = 15 lb.
  2. Thaw: 15 ÷ 4 rounds up to 4 days, plus a spare day, so into the fridge on Saturday, November 21.
  3. Roast: 9 to 18 lb row, 3 to 3.5 hours at 325°F.
  4. Rest: 30 minutes, so out at 4:30 pm.
  5. In the oven: 4:30 pm minus 3.5 hours, which is 1:00 pm.
  6. Done at 165°F in the breast, the thigh and the wing.

The Thanksgiving dinner timeline takes the same numbers and builds the rest of the day around them: the sides, the gravy and the carving. The Thanksgiving dinner planning checklist puts the turkey in context with the shopping and the make-ahead dishes.

Frequently asked questions

How big a turkey do I need?
A common planning figure is 1 pound of whole turkey per person, and 1.5 pounds per person if you want leftovers. For 10 guests that is 10 to 15 pounds. These are estimates: a table with many side dishes needs less turkey per person, and a table where the turkey is the only main needs more. Round up to the next whole pound.
How long does it take to thaw a turkey?
In the refrigerator, USDA says to allow about 24 hours for every 4 to 5 pounds, with the fridge at 40°F or below. So a 15 pound turkey takes about 3 to 4 days, and a 20 pound turkey about 4 to 5 days. Add a spare day. In cold water, allow about 30 minutes per pound, and change the water every 30 minutes.
What temperature should a turkey be cooked to?
165°F, measured with a food thermometer in the thickest part of the breast, the innermost part of the thigh and the innermost part of the wing, according to USDA. Do not rely on color, a pop-up timer or a clock. If you stuffed the bird, the stuffing in the center must also reach 165°F.
How long do I cook a turkey at 325°F?
A common chart for an unstuffed turkey gives roughly 2 to 2.5 hours for 4.5 to 7 pounds, 2.5 to 3 for 7 to 9, 3 to 3.5 for 9 to 18, 3.5 to 4 for 18 to 22, 4 to 4.5 for 22 to 24 and 4.5 to 5 hours for 24 to 30 pounds. Use these to plan the start time and the thermometer to decide when it is done. USDA's chart runs longer (about 3¾–4¼ hours for 14–18 lb), so plan from the long end and start checking early.
Should I cook the turkey stuffed or unstuffed?
Unstuffed is simpler to time because the chart applies and the center heats faster, and you can bake the stuffing in a separate dish. If you stuff it, the stuffing must reach 165°F in the center, which adds time and makes the end of cooking less predictable. Baking the stuffing separately avoids that, and it also fits better with the oven schedule.
How long can I keep leftover turkey?
Refrigerate it within 2 hours of cooking, which is about an hour after you sit down. USDA says leftover turkey and stuffing keep 3 to 4 days in the fridge, and gravy 1 to 2 days. You can freeze any of them instead.
