How the numbers are worked out

Turkey size is guests × pounds per person, rounded up to a whole pound. For example, 10 guests at 1.5 lb each is 15 lb. If you tell the calculator the weight of the turkey you already have, it uses that weight for everything below instead.

Fridge thawing uses 4 pounds per day: the number of days is the weight divided by 4, rounded up, then one spare day is added. For a 15 lb turkey, 15 ÷ 4 = 3.75, which rounds up to 4 days, plus 1 spare day is 5 days. With dinner on Thursday, November 26, that means moving the turkey from the freezer to the fridge on Saturday, November 21. USDA's own figure is 24 hours for every 4 to 5 pounds, so 4 pounds a day is the cautious end, and a thawed turkey can wait in the fridge 1 to 2 days before cooking.

Cold-water thawing is 30 minutes per pound, so 15 lb is 7.5 hours. The turkey sits in a leak-proof bag in cold tap water, the water is changed every 30 minutes, and it goes straight into the oven afterward. The calculator shows the latest time you would need to start so it finishes when the turkey should go in.

Oven time comes from a 325°F chart for an unstuffed turkey: 4.5 to 7 lb takes 2 to 2.5 hours, 7 to 9 lb 2.5 to 3, 9 to 18 lb 3 to 3.5, 18 to 22 lb 3.5 to 4, 22 to 24 lb 4 to 4.5 and 24 to 30 lb 4.5 to 5. A 15 lb turkey falls in the 9 to 18 lb row, so 3 to 3.5 hours. The Butterball chart is one published chart; USDA's chart runs longer (about 3¾–4¼ hours for 14–18 lb), so plan from the long end and start checking early. We schedule from the long end of the Butterball range, subtract a 30 minute rest, and show the short end as the earliest it could finish. For dinner at 5:00 pm: out of the oven at 4:30 pm, in at 1:00 pm. If you stuff the bird, the chart does not apply as written, so the calculator adds 30 minutes to the long end as our own planning allowance. It is not a published figure, and the stuffing must reach 165°F too.

What this does not know

It does not know your oven, whether the turkey started fully thawed, or how often you open the door. Turkeys are done at 165°F in the thickest part of the breast and the innermost parts of the thigh and wing, not at a time. If it is done early, tent it with foil and let it rest longer. Sources: USDA Food Safety and Inspection Service (fsis.usda.gov) for thawing and 165°F, and Butterball (butterball.com) for the roasting chart. Pair this with the Thanksgiving dinner timeline.

Questions

How big a turkey do I need?
A common planning figure is 1 pound of whole turkey per person, and 1.5 pounds per person if you want leftovers. The calculator offers 1, 1.5 and 2 pounds per person. These are estimates: a table with many side dishes needs less turkey per person, and a table where turkey is the only main needs more. Round up to the next whole pound.
When should I start thawing a frozen turkey in the fridge?
USDA says to allow about 24 hours for every 4 to 5 pounds in a refrigerator at 40°F or below. The calculator uses 4 pounds per day, the cautious end of that range, and adds one spare day so the bird is thawed before roasting day. A thawed turkey can stay in the fridge for 1 to 2 days before cooking, which is why the spare day is safe.
Can I thaw a turkey in cold water?
Yes, if you are short on time. Keep the turkey in a leak-proof bag, submerge it in cold tap water, change the water every 30 minutes, and allow about 30 minutes per pound. Cook it right after it thaws, not later. A 15 pound turkey needs about 7.5 hours, so it is a same-day method that needs you at home.
How long does a turkey take to roast at 325°F?
For an unstuffed turkey at 325°F, a common chart (Butterball) gives roughly 2 to 2.5 hours for 4.5 to 7 pounds, 2.5 to 3 hours for 7 to 9 pounds, 3 to 3.5 hours for 9 to 18 pounds, 3.5 to 4 hours for 18 to 22 pounds, 4 to 4.5 hours for 22 to 24 pounds and 4.5 to 5 hours for 24 to 30 pounds. Ovens and birds vary, so use the time to plan and the thermometer to decide. USDA's chart runs longer (about 3¾–4¼ hours for 14–18 lb), so plan from the long end and start checking early.
How do I know the turkey is done?
Use a food thermometer. USDA says the turkey is safe at 165°F, measured in the thickest part of the breast, the innermost part of the thigh and the innermost part of the wing. Stuffing cooked inside the bird must also reach 165°F. Color and pop-up timers are not reliable.
